Homemade Hot Cocoa

Recipe:
1 box carnation powdered milk
16 ounces nestle quick chocolate milk mix
1 cup confectioner's sugar
6 ounces regular dry creamer
1/2 cup cocoa powder

Mix all ingredients together in a big bowl.  Store in an airtight container. 

To make a cup of cocoa - put three heaping tablespoons in the bottom of a large mug and add hot water.  You can adjust the cocoa based on your taste.  I added marshmellows and layered them with the cocoa in a container.

Peanut Butter Kisses

The key to this recipe whether you make the cookie recipe from scratch or from a prepackaged mix is to roll the cookie dough in sugar.  When you pull the cookies out of the oven, have the kisses ready, count to 20 and then place them firmly onto the peanut butter cookies... by doing this, you are guaranteed to not have the kisses melt!  Enjoy!

Savory Beef Brisket

Super easy slow cooker beef brisket.

3 cups ketchup
2 packets french onion dry soup mix
2 cups water
1/2 teaspoon each salt and pepper
3-5 pound beef brisket

Mix the above ingredients together (besides the brisket).  Put half the mixture in the bottom of the slow cooker.  Put the brisket in the cooker and coat with the remaining sauce.  Cook on low for 6 to 8 hours.  Slice and serve.  I served it with some of the sauce from the cooker and Jiffy brand Johnny Cakes.  It was very yummy!

Chicken Taco Salad

Chicken Taco Salad - Wal-Mart Style

Dinner tonight had to be quick and easy.... Wal-Mart sells bagged chopped salad mixes in their produce section.  I purchased the BBQ Chopped Salad Starter Kit.  Here is what I added:

The mix includes salad mix with cabbage, bacon (little), tortilla chips, and dressing.  I added left over chicken breasts chunks and shredded, a chopped green apple, an d bumped up the dressing.

To the dressing I added 1/4 cup Ranch dressing, 1/4 cup BBQ Sauce.  I mixed them together with the dressing given in the kit and added it to the salad. 

I served the salad with Cantina Chips.  My daughter likes the chips broken up under her salad so she had hers' that way

**A few add-ons - shredded cheese, black beans, sweet corn, salsa... all of these would be great add-ons for this salad.

Cornbread Chicken

3 chicken breasts halved
Box of Cornbread flavored Stovetop Stuffing Mix
1 can Campbells Cream of Chicken soup
3/4 cup water
Salt and Pepper

Heat oven to 350.  Cut chicken breasts in half and put in the bottom of a 9x13 pan pretty close together but not touching.  Salt and pepper the chicken.  In a seperate bowl mix the Stovetop Stuffing, can of soup and the water.  Spoon the stuffing mix over the chicken in the pan.  Bake uncovered at 350 for 50 minutes.  Let stand for 5 minutes.

I served this recipe with a side of cranberry sauce.  It was very yummy!

Super easy dip

Use a jar of Spinach Artichoke Dip from your local grocery store.  Add 1/2 cup Parmesan cheese.  Stir the cheese into the dip.  Pour the mixture into an oven safe dish.  Sprinkle Parmesan cheese over the top.  Bake at 375 for 15 minutes or until the dip bubbles and cheese is "crusty".  Serve with your favorite crackers or bread bites.

**For the bread bites I used a sourdough bread which was sliced and cut into quarter size pieces.

Carmel Bacon Bites with super easy Carmel Sauce

Caramel Bacon Bites

All I can say is "Oh my heaven"!!!!!!!!!

Caramel sauce is super easy to make with 1/2 stick butter, 1 cup brown sugar, 1/2 cup half and half, a pinch salt... cook on the stove top until boiling.  When boiling, reduce heat and add 1 tablespoon or so of Vanilla.  This recipe can be served hot or cold...it is super yummy.
