Chicken Taco Salad

Chicken Taco Salad - Wal-Mart Style

Dinner tonight had to be quick and easy.... Wal-Mart sells bagged chopped salad mixes in their produce section.  I purchased the BBQ Chopped Salad Starter Kit.  Here is what I added:

The mix includes salad mix with cabbage, bacon (little), tortilla chips, and dressing.  I added left over chicken breasts chunks and shredded, a chopped green apple, an d bumped up the dressing.

To the dressing I added 1/4 cup Ranch dressing, 1/4 cup BBQ Sauce.  I mixed them together with the dressing given in the kit and added it to the salad. 

I served the salad with Cantina Chips.  My daughter likes the chips broken up under her salad so she had hers' that way

**A few add-ons - shredded cheese, black beans, sweet corn, salsa... all of these would be great add-ons for this salad.

Cornbread Chicken

3 chicken breasts halved
Box of Cornbread flavored Stovetop Stuffing Mix
1 can Campbells Cream of Chicken soup
3/4 cup water
Salt and Pepper

Heat oven to 350.  Cut chicken breasts in half and put in the bottom of a 9x13 pan pretty close together but not touching.  Salt and pepper the chicken.  In a seperate bowl mix the Stovetop Stuffing, can of soup and the water.  Spoon the stuffing mix over the chicken in the pan.  Bake uncovered at 350 for 50 minutes.  Let stand for 5 minutes.

I served this recipe with a side of cranberry sauce.  It was very yummy!

Super easy dip

Use a jar of Spinach Artichoke Dip from your local grocery store.  Add 1/2 cup Parmesan cheese.  Stir the cheese into the dip.  Pour the mixture into an oven safe dish.  Sprinkle Parmesan cheese over the top.  Bake at 375 for 15 minutes or until the dip bubbles and cheese is "crusty".  Serve with your favorite crackers or bread bites.

**For the bread bites I used a sourdough bread which was sliced and cut into quarter size pieces.

Carmel Bacon Bites with super easy Carmel Sauce

Caramel Bacon Bites

All I can say is "Oh my heaven"!!!!!!!!!

Caramel sauce is super easy to make with 1/2 stick butter, 1 cup brown sugar, 1/2 cup half and half, a pinch salt... cook on the stove top until boiling.  When boiling, reduce heat and add 1 tablespoon or so of Vanilla.  This recipe can be served hot or cold...it is super yummy.

I also made this entry in a skillet with boneless pork chops and pears.  It required a little more seasoning but it was just as good.

Super easy to put in the crock pot on low for 6-8 hours.  Serve with corn bread or biscuits.  This recipe is even better the next day.  My crew likes it with melted cheese on top and sour cream on the side.

Crab Napoleons

I love cooking and I love to eat, but this recipe is easy and is by far one of the yummiest ever!!!  Great for a party.  Great for a football game or brunch.  I made mine with biscuits, but they are great with crescent rolls too.  Try this recipe.  I would be willing to guess they would be great by substituting the crab for tuna as well.

Meatballs in Wine Sauce - Slow Cooker

This recipe tastes wonderful if you follow the recipe or if you prefer and need the time to do it in the slow cooker.  The key is the sauce.  I have also used already prepared meatballs in the frozen food section of the grocery store.  Just make sure you get the Italian style.  If you want to make this recipe in the slow cooker, set the slow cooker to low for 6-8 hours.  Serve it over the pasta of your choice.
Taco Pasta Salad

This salad is amazing with or without the pasta.  I would recommend a little more dressing depending on your taste.  It is also wonderful severed with a side of corn chips.  My son can eat this salad by the truck load.

This recipe is always a hit.  I make it with or without the asparagus.  I have also substituted the ham for patty style sausage.  The key is the hollandaise sauce.  When finished, I always sprinkle a little Paprika on the top of the sauce.  Enjoy!
